BBQ sauce is one thing every grill chef is particular about. The perfect BBQ sauce adds flavor and moisture to meat, but every area has its own varieties. It's simple to make, so you can easily develop your own custom BBQ sauce.
Types of BBQ Sauce
There are several types of BBQ sauce. Most traditional BBQ sauces either use tomato sauce, mustard, or vinegar as a base, and they come in all thicknesses. For instance, North Carolina barbecue sauce is thin and runny, while Kansas City barbecue sauces are thick and sticky.
There are also variations of sauces known as mopping sauces, which is regularly slopped all over the meat while it is cooking. Finishing sauce is used as a condiment when eating barbecue and is not used during the cooking process.
Using BBQ Sauce
BBQ sauce can be used before, during, and after cooking the meat. The only warning is to avoid using barbecue sauce that contains tomatoes or a lot of sugar during the cooking process. These ingredients burn too easily and can affect the taste of your meat.
BBQ Sauce Recipes
I have included three basic BBQ sauce recipes - one for each type of main ingredient. Make the basic barbecue sauce by following the recipe, then start experimenting to develop your own signature sauce.
Basic Tomato BBQ Sauce
1 regular can of tomato sauce
1 can of tomato paste
2 tablespoons vinegar
2 tablespoons olive oil
2 tablespoons brown sugar
3 cloves garlic, crushed
4 tablespoons onion, minced
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon cayenne
fresh ground pepper to taste
Cook the garlic and onion until it's soft, and then add all the rest of the ingredients. Simmer on low for 20-30 minutes. Keep stirring it often so it doesn't burn, then refrigerate for a few days before you use it. This allows the flavors to blend and mellow.
Basic Vinegar BBQ Sauce
1 1/2 cups apple cider vinegar
1/2 cup hot water
2 tablespoons brown sugar
1 tablespoon paprika
1 teaspoon cayenne
1 teaspoon salt
1 teaspoon black pepper
Stir the brown sugar into the hot water. Continue stirring until the sugar is completely dissolved. Add the remaining ingredients and heat on low for a few minutes. This perfect to coat pulled pork, but don't add so much that it gets soupy.
Basic Mustard BBQ Sauce
1 cup prepared yellow mustard
1/3 cup brown sugar
1/2 cup balsamic vinegar
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon cayenne
Mix all the ingredients in a saucepan and simmer on low for at least thirty minutes. This is great for southern pork style barbecue.
Once you've tried each of these BBQ sauce recipes, you can choose which is closest to what you want and begin modifying. Add or subtract ingredients, or change the amounts of different spices.
Finding the perfect barbecue sauce just takes time! Then you just have to decide whether to share your personal BBQ sauce recipe, or keep them begging!

Biscuit on a Stick
About ten years ago one of my camping buddies pulled a can of biscuits out of his cooler one cold camping morning and introduced us to this great and simple culinary miracle. A can of Hungry Jack buttermilk biscuits has been a staple in my cooler ever since.
INGREDIENTS:
1 can biscuits
squeeze butter
1 stick
PREPARATION:
Roll out a biscuit with your hands so that it becomes elongated and about one inch thick at the center. Wrap it tightly around the end of your stick and pinching it as you go to insure that it stays on the stick while cooking.

When done wrapping, the biscuit should take up about six inches of the stick. Heat over the campfire until golden brown. Pull it off the stick, pour butter down the hole left by the stick, and enjoy.
The way I like it is to pour butter around the outside of the biscuit and sprinkle sugar on it, then pour your favorite jelly inside. It is very messy, but very good.

Biscuit S'mores
A camping recipe from Carrie. This recipe is also really tasty with just chocolate, if you've forgotten the marshmallows. If made with just chocolate, it's easier to pull apart the two biscuits and share with a friend.
INGREDIENTS:
1 can refrigerated biscuits
1 bag marshmallows
chocolate bars
PREPARATION:
Stretch out one of the biscuits and place a marshmallow and a few pieces of a chocolate bar on top. Then take a second biscuit and place it over the first, sealing the edges. Finally, wrap in tin foil and place either in the embers of the campfire or on a grate over a fire ring.
We found it works best over a fire ring, which makes it easier to turn them over half way through cooking so one side doesn't burn. When biscuit is cooked (about 5 minutes, depending on heat of fire) remove and enjoy.

Brownie S'mores
I discovered how great these taste when I forgot to take graham crackers camping, but we had taken brownies. So we improvised and ummm...yummy.
INGREDIENTS:
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup cocoa
1/2 cup shortening or margarine
1 1/2 cups sugar
3 eggs
1/2 cup peanut butter
1 teaspoon vanilla
1 cup chopped peanuts
1 6-ounce package chocolate chips
1 bag marshmallows
PREPARATION:
At home: Mix together flour, baking powder, salt, and cocoa and set aside. In a separate bowl melt shortening(margarine). Mix in sugar, eggs, peanut butter, and vanilla. Add flour mixture. Add in the nuts and chocolate chips.
Put into a greased 9 inch x 13 inch pan. Bake in a preheated 350 degree oven for 25-30 minutes. Cool and cut into 1 1/2 inch squares. Place in a container with a lid to take camping.
At the campground: Cut brownies in half horizontally, and set aside. Place marshmallow on a stick and toast over campfire coals until golden brown. Place marshmallow on one brownie half and place other half on top. Squish together slightly and enjoy.

Campfire Baked Potato
INGREDIENTS:
1 potato
1/2 medium onion, sliced
1 teaspoon butter
PREPARATION:
Slice potato and add un-cooked onion slices between the potato slices. Lay butter on top so that it may melt over the potato. Wrap in aluminum foil and lay in a good bed of coals or around the edge of the campfire, but not too far away.
Rotate every so often. Cook for about 7-10 minutes or longer, if needed.

Campfire Bass
INGREDIENTS:
2 bass fillets
1 tablespoon butter
salt, pepper, and garlic powder, to taste
PREPARATION:
Place fish in foil, add seasonings, and seal. Place foil pack near the campfire and cook for 18 to 20 minutes.

Campfire Comfort Chicken
INGREDIENTS:
15-20 chicken wings
Mrs. Dash Garlic and Herb Seasoning
heavy duty aluminum foil
PREPARATION:
Fold aluminum foil to make a large pocket for the grill. Place chicken wings on foil and sprinkle Mrs. Dash on chicken. Cover with foil and cook at least one hour, or until chicken is lightly crispy. When done, unfold aluminum foil and enjoy the chicken at the campfire.

Foil Dinner
INGREDIENTS:
hamburger
onion
potatoes
whole kernel corn
cheese
seasonings
PREPARATION:
You can cook this all in one foil bag, or you can do individual bags. Make hamburger patties and place on foil. Season patties to your liking. Dice or slice onions (however you prefer to eat them). Place them over hamburger patties.
Wash and cut potatoes into bite size chunks. Place them around hamburger patties. Fold up sides of foil to form a bowl. Pour corn (and any other vegetables like green beans, peas, or carrots) over top of hamburger patties. Do not drain. If you are using dry corn then be sure to add some water. Close foil and cook for 45 minutes or until hamburger and potatos are done. If you cooked them individually there is no need for dirty dishes. Open foil bags, top with cheese, and serve.
Corn on the Cob
INGREDIENTS:
corn on the cob with the husks left on
PREPARATION:
Soak the corn, with the husks still on, in water making sure they are fully submersed. You can even soak them in a lake, stream, etc. Remove the corn from the water and place directly over or on hot coals.
Allow to cook for about 5-10 minutes, rotating a couple of times, and then remove from the fire and remove the husks. The corn will be roasted and it's delicious with some butter and/or salt.

Corn on the Cob
My kids love this recipe when we go camping. It is so easy and the corn will be really tender. It is a cheap and easy side dish for a campfire meal.
INGREDIENTS:
1 bag frozen corn on the cob
Toni's Cajun Spices
butter
salt and pepper, to taste
PREPARATION:
Place individual ears of corn, still frozen, on a piece of heavy aluminum foil. Top with Toni's, salt and pepper, and a pat of butter. Wrap each ear of corn with foil and twist the ends. Foil wrap will look like candy wraps.
I then place the individual wraps right on an open fire, but I have placed them on the grill too. Takes about 5 to 10 minutes. Enjoy!

Corn on the Cob
INGREDIENTS:

PREPARATION:
When you have cooked your corn on the cob the way you like, spread some real mayonnaise on your corn and then sprinkle with some seasoned salt. You will never put butter on your corn again.

Cook corn on the cob to your liking, spread on mayonnaise, roll in cheese, squeeze on butter, and sprinkle on desired amount of chili powder.

Dogs in Sleeping Bags
This makes a nice lunch, and kids will enjoy helping prepare and cook it. Refrigerated bread or pizza dough is available in most supermarket bakery sections, or you can make your own with a breadmaker. I used a whole wheat recipe, but feel free to experiment with your own favorite. Since the cooking times over coals can vary so much, it may be wise to check after about 20 minutes. When the buns are golden brown, they're done.
INGREDIENTS:
6 large-size wieners
1 package (small loaf size) bread dough
3 slices of cheese
PREPARATION:
Pinch off a ball of bread dough about the size of a small apple and flatten inside a folded sheet of aluminum foil until it is longer than the wiener and approximately 6 times as wide. It helps if you coat the ball with a little margarine first.
Place a wiener at one edge and add half a slice of cheese.
Roll up and pinch ends together. Place on a greased pan. In the coals of your morning fire (or even last night's, as long as you still have hot coals) place 3 or 4 stones so that your pan will be supported about 4 inches above the coals, and put the pan on the stones.
Take a piece of foil (the wide, heavy duty kind works best) long enough to form into a cylinder that will fit over the pan and the stones, and close the top end. This is your oven. After about half an hour to 45 minutes, your cheesy dogs-in-sleeping-bags will be ready.

Easy Campfire Pot Roast
INGREDIENTS:
3 pound boneless roast
2 cups baby carrots
1 large onion, sliced
2 stalks celery, sliced in bitesize pieces
1 cup V-8
1/2 cup water
1 envelope dry onion soup mix
3 tablespoons flour
salt and pepper, to taste
1 large oven bag
PREPARATION:
Place roast in bag and surround with all the vegetables. Mix V-8, water, soup mix and flour, then pour over top of roast. Close bag and grill over medium fire for about 1 1/2 hours.

Easy Cheese Melts
INGREDIENTS:
thinly sliced meat
sliced onion
sliced green pepper
cheese
hamburger buns
PREPARATION:
Stack sliced meat on a piece of aluminum foil and shape into a tent. Place on the fire and cook the meat in the "tent." Meanwhile, brown some onions and peppers on the side. When the meat starts to cook, put the cheese on top of it and watch it closely until it melts together.
Serve with the cooked onions and peppers on hamburger buns.

Easy Corn On The Cob
INGREDIENTS:
corn on the cob, with the husks
butter
salt and pepper
PREPARATION:
Pull the husks back on each cob and remove the silk. Close the husks back around the cob. Dunk into a bucket of water and allow the ear to draw water up, permiating throughout the ear. Pluck from the water and wrap each ear of corn in aluminum foil.
Bury in campfire coals, or place on a grill.

Foil Fajitas
I make these in advance and freeze well before packing in ice. Great for no mess no dishes camping. Everything is precooked so heating is easy and very fast.
INGREDIENTS:
3 pounds of grilled chicken
2 bell peppers, 1 red and 1 green, sliced
2 onions sliced
1 package fajita seasoning mix
12 fajitia size tortillas
aluminum foil
PREPARATION:
Make desired amount of foil pouches, 1 per person. Inside each pouch place a handful of peppers, chicken and onion. Make fajita mix in a bowl, and when dissolved pour equally into the foil packs. Seal the foil so it will not leak.
Place on warm coals until hot. Serve with tortillas.

Foiled Hash Browns
INGREDIENTS:
4 hash brown patties
small can mushrooms
your favorite spices (I prefer Lawry's)
margarine
PREPARATION:
Spray aluminum foil with cooking spray or grease it with butter. Butter both sides of two hash browns and lay side by side on the foil. Top with the mushrooms and spices of choice. Butter both sides of the other two patties and lay them on top (sandwich-style).
Roll up the edges of the foil and place on a grill or campfire grate. Flip package occasionally to heat evenly. Cook until heated through. Package will be soft and mushy. (Time depends on heat of fire or coals.)

Fudge On A Stick
Everybody that has tried these has gone crazy over them. They are really good.
INGREDIENTS:
marshmallows
smooth or chunky peanut butter
PREPARATION:
Put a hole in the center of a large marshmallow and stuff it with peanut butter. Put it on a roasting stick and hold it over the campfire until the marshmallow is to your liking. Allow it to cool a bit and then carefully remove it from the roasting stick and enjoy.

Grilled Potatoes In Foil
INGREDIENTS:
3 large potatoes, sliced
1 large onion, sliced
1/2 cup of mayonnaise
3 garlic cloves, minced
1/2 teaspoon paprika
salt and pepper, to taste
PREPARATION:
Mix mayo, garlic and paprika in a large bowl. Then add the potatoes and onions, and mix well. Now you can either divide the mixture evenly into 6 individual foil packs, or it all cooks nicely in a covered foil pan.
Just put on the grill or over coals for about 25 to 30 minutes.

Hash Mess with Eggs
My three daughters named this recipe. It doesn't look too appetizing, but they love it.
INGREDIENTS:
1 pound ground beef
1 bag frozen, cubed hash browns
2 sticks butter
salt and pepper, to taste
6 large eggs
1/2 cup milk
1 green pepper, chopped
1/2 onion, chopped
5-8 mushrooms, sliced thin
1 cup shredded cheddar
PREPARATION:
Make this at home a day ahead and bring it with you. Fry hamburger until done. Add vegetables and mix together with seasonings. Put in 9x13 cake pan. Top with cheese. Cover with foil. At the campsite, mix eggs and milk and pour over top of hash mess and cook until eggs are done.
Very good and filling. The kids eat it with Ketchup; us adults use salsa and sour cream.
We always take a metal wire grill camping with us so I can cook with our camping pan set. You can also cover the pan with foil and set it on rocks in the embers. We have done both. Just really butter the pan, if you do the embers thing!

Hobo Dinner
INGREDIENTS:
4 medium potatoes, peeled and sliced
1/2 medium onion, sliced or diced, as desired
1 lb ground chuck
1/4 cup water
salt and pepper to taste
aluminum foil, in 8 inch lengths
PREPARATION:
Add water to ground beef and mix well. Add potatoes, onion and seasoning. Mix well. Separate into 3-4 servings. Wrap in double-thickness aluminum foil. Place seam side up on medium hot grill for 40 minutes, rotating periodically.
Do not flip. Open carefully. Serve with ketchup.

Hobo Dinner
This is an easy meal with quick cleanup. Be sure to flip the foil packs while cooking or your potatoes will burn.
INGREDIENTS:
2 pounds ground beef
1 medium onion
4 medium russet potatoes
salt and pepper
PREPARATION:
Grab a 10-15lb bag of charcoal and light it. Let them burn down until they are a nice grey color and no longer flaming.Rip off 6 large sheets of heavy duty tin foil, make beef into 6 round patties, slice the onion into rings, peel and slice potatoes into fairly thin circles.
Layer in the tin foil potatoes, onion, and meet patty on top. salt and pepper them. Seal then up and toss directly on to coals. Flipping them over every 10 minutes or so. Continue doing this for the next 45-50 minutes. Rip one open and inspect for doneness of meet and potatoes.

Hunters' Stew
This is a meal that is good for the first night as you can make it at home, freeze it, and it helps with the cooling of sodas, or whatever, in your cooler and is defrosted by the night time allowing you time to set up and not have to worry about getting something fixed to eat.
INGREDIENTS:
1 pound hamburger
2 potatoes, peeled and cubed
2 large carrots, cleaned and sliced
2 onions, peeled and cubed
PREPARATION:
In a large coffee can, put a little olive oil or oil of some kind in the bottom and place potatoes, then carrots, then onions, and seasoning (I use Tony Chachere's). Then place hamburger on top and season again.
Put foil on top and freeze, if you're making it ahead of time. At the campsite, put the can in the fire coals or close to the fire. Cook for 45 minutes, mix it all up and it is ready.

Ice Cream Cone S'mores
This is a lot less messy for the little ones, and they love it. In fact our daughters are now teenagers and this is the only way they like their s'mores.
INGREDIENTS:
Hershey's Milk Chocolate bars
marshmallows, large
ice cream cones
PREPARATION:
This is a great idea for the little ones. I brought ice cream cones with us on a camping trip. I thought we would have ice cream cones for my daughter's birthday, but I forgot that I had no way to keep the ice cream from melting.
So this is what we came up with. We roasted our marshmallows and took three pieces of Hershey's Milk Chocolate. We put one piece of chocolate in the cone, added a roasted marshmallow, another piece of chocolate, a second marshmallow, and topped it off with a piece of chocolate stuck in the top of the marshmallow.

Inside Out S'mores
A camping recipe
We were bored with the same s'mores, but loved the taste. So we came up with this recipe.
INGREDIENTS:
bag of semi-sweet chocolate morsals
bag of marshmallows
graham crackers
sprinkles of all kinds
PREPARATION:
Melt chocolate in aluminimum pie plate or disposable bread tin. Place marshmallow on skewer and roll in melted chocolate. Then roll in your favorite topping, either crushed graham crackers or sprinkles.
You can use either toasted or untoasted marshmallows, but we preferred the untoasted. Toasted marshmallows were hard to spin around in the melted chocolate.

Kid's Favorite Foil Dinner
My kids, now grown (21 and 24 ), still ask if we are going to have this when we go camping.
INGREDIENTS:
1 pound ground beef or turkey
2 stalks celery, cubed into small pieces
2 cups baby carrots
2 medium potatoes, diced
1 small onion, thinly sliced
seasoning salt, to taste
ketchup or steak sauce, whichever you prefer
PREPARATION:
Take a 12" piece of foil, put 1/4 of the meat on it, flatten it into a pattie shape, sprinkle with seasoning salt, and then top with one quarter of all other ingredients. Sprinkle again with seasoning salt and wrap tightly with the foil.
I always wrap with another piece, just to be safe. Continue to make three more foil dinners. Place on grate over campfire coals for 45 minutes, turning over about every 10 minutes. Remove from fire, put pouch on plate, open and enjoy.

Knight in Shining Armor
This recipe is very delicious. I learned how to make it when my class went on a field trip to a boy scout camp about 4 years ago.
INGREDIENTS:
1 pound ground beef
1-2 potatoes, cubed
2-3 carrots, sliced
1 onion, chopped
BBQ sauce
PREPARATION:
Lay out a piece of foil about 1.5 feet long. Put the ground beef on it, then the carrots, potatoes, and onions, and mix it up a little bit. Next pour BBQ sauce over it all, wrap it all up in the foil, and place over the fire.
Let it cook for about 30 minutes.

Mary's Taters
This has become a favorite camping recipe, not only with family and friends, but with my Boy Scouts too.
INGREDIENTS:
large baking potatoes (one for every 2 people)
butter flavored cooking spray
garlic salt
seasoned salt
PREPARATION:
Scrub potatoes well and cut in half lengthwise. Place one half on a square of foil. Regular foil will do, if it is being cooked in an oven, but use heavy duty foil for cooking on a grill or in hot coals.
Spray both sides of potato half with cooking spray. Then, with cut side facing up, sprinkle with garlic and seasoned salt. Wrap the foil up around the potato half and cook until potato is soft. If cooking in hot coals, be sure to turn it over every few minutes to prevent burning.

Preparation time: 25 minutes
Meatballs and Potatoes
You can leave this foil-wrapped meal on the coals for up to two hours, if you want to make it and go to the beach or for a bikeride before dinner.
INGREDIENTS:
1 pound ground beef
4-6 potatoes
1 green or red pepper
4 cloves garlic
salt and pepper, to taste
cooking spray or butter
PREPARATION:
Make meatballs out of the ground meat, as big as you like. This will be split up for four different foil pouches. I normally make two to three meatballs per pouch. Cut up potatoes into cubes. Slice up pepper and garlic.
Split up ingredients onto four different pieces of foil. Spray with the cooking spray or add butter (enough to taste and to prevent sticking). Add salt and pepper to taste. Wrap up each packet tightly and place into the coals of the fire for about one hour. Each packet is one meal.

Pudgie Pies
A camping recipe
For this one, iron "pie makers" are needed; and they don't have to be just for dessert! You can make pizzas too with sauce, cheese and toppings of your choice. Experiment and find a favorite of your own!
INGREDIENTS:
bread, any type will do
butter
pie fillings of your choice
PREPARATION:
Spread one side of bread with butter and place the buttered side into the pie maker. Spread with pie filling. Butter another slice of bread and place it butter side up on top of the pie filling. Close the pie maker and trim excess bread from the sides.
Place the pie maker into the coals for about 10 minutes; then open and enjoy!
Servings: as needed

Minty S'mores
A yummy mint version of an old standby.
INGREDIENTS:
graham crackers
marshmallows
Andes Mints
PREPARATION:
Toast your marshmallow. Break a graham cracker in half. Lay two unwrapped Andes Mints on one half of your Graham Cracker. Place toasted marshmallow on top of candies. Top with other half of your graham cracker and chomp.

More S'mores
I was looking for a less messy way to make S'Mores and came up with this.
INGREDIENTS:
melted Hershey bars or Hershey's syrup
marshmallows
graham crackers, crushed
PREPARATION:
If using chocolate bars, melt them in a foil cup. Toast marshmallows or not. Dip in melted chocolate or chocolate syrup and then roll in graham cracker crumbs. You can crush the graham crackers in a baggie.

Mud Potatoes
I found this recipe in a magazine. Kids had a good time doing this. I find if you turn the potatoes throughout the cooking time, there is less chance for burn spots. They are good.
INGREDIENTS:
1 potato per person
clean mud
PREPARATION:
Have the kids mix up a good size bowl of clean mud. Wash and dry potatoes. Pack the mud around each potato and carefully put them into campfire coals. Leave about one hour. When done the mud will be hardened.
Let cool a few minutes, crack open, and enjoy.
Servings: 1 per person

Oatmeal Pies
I got this idea from an already made version available in grocery stores, but this version is warm and gooey.
INGREDIENTS:
2 large oatmeal cookies, with or without raisins
1 large marshmallow
PREPARATION:
Heat a marshmallow over a fire of any type, then sandwich between the two cookies.

Honey Nut Os Mix
Great campfire pass around. You can't stop eating these.
INGREDIENTS:
Honey Nut Os cereal
pretzel sticks
walnut halves
banana chips
plain M and M candy
PREPARATION:
In a large (gallon) size Ziploc bag, combine all ingredients in layers, until the bag is full, and then shake around a bit.

Preparation time: 5 minutes
Old-Fashioned Hot Chocolate
INGREDIENTS:
6-8 ounces quality semisweet chocolate
3 tablespoons cocoa powder
2 tablespoons sugar
pinch of salt
2 cups whole milk
2 cups half-and-half
1/4 teaspoon vanilla extract
1 teaspoon butter
PREPARATION:
Grate the chocolate into a bowl. A potato peeler works well for this. Combine chocolate in a heavy sauce pan with remaining ingredients (except butter). Slowly bring to a boil, whisking constantly. Remove from heat and whisk in the butter.
Let rest for about 10 minutes before serving. If you're making this ahead of time, simply refrigerate until ready to reheat at the campground.
Servings: 4-6

Pamtatoes
This is my husband's favorite, and he named them.
INGREDIENTS:
1 potato per person
1 stick butter
garlic powder, optional
salt, to taste
1 medium to large onion
1/2 cup brown sugar, or to taste
water
PREPARATION:
Slice potatoes and onions and layer in a baking pan or a foil baking dish. Sprinkle each layer with salt, garlic powder, and a couple slices of butter. Once you have all of the potatoes and onions ready pour enough water in the pan to cover the bottom of the pan (not too much), and then add the brown sugar on top, cover, and place on the campfire (or grill) to cook, turning occasionally.
The brown sugar will caramelize. These potatoes are especially yummy for breakfast, but they are good with any meal.

Peach Delight
We've been making this for years, since I was in Girl Scouts. It's our favorite.
INGREDIENTS:
peach halves
mini marshmallows
brown sugar
pecans
PREPARATION:
You can either make individual packets or a family packet, your choice. Take a can of peach halves and put into a tinfoil packet. Add brown sugar and mini marshmallows. Pecans are optional. Wrap up your foil packet and place in hot coals until marshmallows are melted.
You'll have a delicious syrup and melted marshmallows around your warm peach. Mmmm good!
If you are really adventurous, top them off with a scoop of your favorite ice cream and nuts and you have yourself a "to die for" banana split!

Peanut Butter S'mores
INGREDIENTS:
graham crackers
miniature peanut butter cups
marshmallows
PREPARATION:
Toast the marshmallow. Place one peanut butter cup (try the new white chocolate ones) on a graham cracker. Top with the toasted marshmallow and the other graham cracker.

Spiders (hot dogs)
I don't know where my mom came up with these, but I have enjoyed them since I was little. They are great to do before s'mores, then you know that the kids have had something other than sugar before bed. I did these at a Church campout and the kids were just amazed.
INGREDIENTS:
hot dogs (the kind that come 8 or 10 in a pack)
PREPARATION:
You'll need a knife and some roasting forks or sticks. Cut the ends of each hot dog into quarters leaving about 1-1/2 to 2 inches in the middle uncut. You want to leave enough uncut to stick the fork in.
Roast the dogs over the fire or hot coals in a grill. The "legs" will curl out as the hot dogs cook. You can also do them in the kitchen at home over a hot stove burner.

Grilled Bananas
This is an extremely easy recipe that the kids and adults enjoy making as much as eating!
INGREDIENTS:
bananas, 1 per serving
mini marshmallows
mini semi-sweet chocolate chips
walnuts, chopped
PREPARATION:
Slice banana lengthwise with peel still intact to make a slit in the banana (do not cut all the way through). Stuff each banana with marshmallows, chocolate chips, and chopped walnuts. Close banana up and wrap tightly with foil.
Place banana into campfire and heat. The skin of the banana should be nice and brown when it is done. Use spoons to scoop out the banana and all the extras.

Walking Tacos
My family loves to have Walking Tacos when we are camping. It is quick to prepare and easy to clean up.
INGREDIENTS:
individual bags of tortilla chips
1 pound prepared taco meat
shredded lettuce
shredded cheddar cheese
sour cream
salsa
PREPARATION:
Heat up meat in a pan over the campfire, grill or campstove. Crunch up the tortilla chips in each bag, then use a scissors to cut the bags open along the side. Fill each bag with meat and toppings of choice.
Use a fork to eat right out of the bag. Just throw away the bags when done.

Preparation time: 10 minutes
Poor Man Ribs
You can also take cooking string, the kind that you use to tie up chicken and turkey legs, and lace all the hot dogs together. Just lay all hot dogs together side by side, then thread them together about 1 1/2" down from each end (I use a carpet threading needle), and then loop right down the other end. When you get back to the dog that you started with, tie the string together. Cook on grill while brushing with the sauce. Now you have a rack of poor man ribs.
INGREDIENTS:
hot dogs
barbecue sauce
PREPARATION:
Cook the hot dogs as normal either on a grill, over an open flame, or on a stick. While cooking keep brushing with your favorite barbecue sauce. Then either drop the dogs on a bun, put them on a plate, or you can just eat it right off the stick.
